Fundy Seafood Expeditions – The Lobster Academy, New Brunswick
The Lobster Academy, originally launched to educate buyers for restaurants and food chains on everything they needed to know about lobster – from buying to proper handling and preparation. In 2013, the program is called the Fundy Seafood Expedition and addresses, through education & entertainment, the questions that are becoming increasingly important for so many people today:
- Where does my seafood come from? What is its impact on the environment? How is it processed?
- What are the nutritional aspects of the food I eat? What is the life cycle of different seafood species?
- How do you pull an endangered fish back from extinction? What does it take to bring sustainable seafood to market? How do I prepare it? And when do we eat?
All of these questions are answered during a three-day/four night program, which introduces the participants to the seafood industry in southern New Brunswick. Activities include classroom & auditorium learning experiences, maritime boating adventures, turnkey seafood facilities tours and the fine art of dining on and preparing seafood with instruction by experts at Kingsbrae Arms Relais & Chateaux. The program is not limited to lobster, but includes sturgeon and its caviar, salmon, scallops and the impact these products have had on the area.
