Celebrity Chef To Reboot Historic Property in Prince Edward Island
Chef Michael Smith and his wife Chastity are working to reposition the 17-room property as one of the leading culinary tourism destinations in the world.
“I’m thrilled to return to the kitchen that launched my career,’’ Smith, a best-selling author of nine cookbooks, said in a statement. “I’m proud of all that I’ve achieved as a TV host and family food advocate. You can expect a lot more from me but I can’t wait to get back to my roots as a chef.”
Chastity said the couple are proud of their P.E.I. roots, and are eager to share their unique vision and contemporary hospitality to visitors from around the world.
Construction has begun on FireWorks, a new restaurant addition featuring a concept not only unique to Prince Edward Island but unique to the world. “We’ve scoured the globe and can’t find anything like it,” said Michael. FireWorks will showcase a newly built open-fire kitchen consisting of a 22-foot long brick-lined open hearth, rotisserie, grill, smoke house and oven that will be fully fueled by live fire that will serve as anchor to the newly vaulted dining space.
The business will open in June. In July, the couple will launch a brand new interactive feast that will be served once nightly to just 44 guests. Featuring the many products of Prince Edward Island, this multi-course meal will be served directly by the inn’s chefs and presented to guests seated at long butcher-block family-style tables overlooking Fortune Harbour. To further enhance the feast experience, Michael and Chastity will plant an organic farm on site and restore the herb gardens Michael planted years ago.
